Description
Variety: Vlachiko – Bekari 80%, Debina 20%.
Vineyards: From Zitsa’s mountains one of the finest examples of pink sparkling wine. It is originating from vineyards of 650m altitude and southwest orientation.
Microclimate: Harsh winters with substantial rainfall and cool summer nights, due to high altitude and river bridges, allow grapes to ripen slowly reaching the ideal maturation, retaining acidity and fully developing the distinctive flavors and aromas of these varieties.
Vinification: red vinification takes place. The fermentation continues and is completed during the spring as the temperature raises. The second fermentation is held in sealed tanks under controlled conditions where natural CO2 is the result of this second fermentation. The wine then stays inside the sealed tank with its lees for 4 months, in order to get richer in terms of body and. aromatic complexity. The rose sparkling wine Zitsa showcases classic varietal characteristics of all the three varieties managing to maintain a unique authenticity in flavor.
