Variety: 100% Debina

Vineyards: From Zitsa’s mountains one of the finest examples of Debina variety. It is composed from the rare native Debina variety

which is cultivated in an area of approximately 400 hectares in the hilly mntains of Zitsa in Alcha village. The altitude of the vineyards is 550m above sea level.

Vinification: Classical white vinification takes place at low temperature. The fermentation continues and is completed during the spring as the temperature raises. The second fermentation is held in sealed tanks under controlled conditions where CO2 produces naturally. The wine then stays inside the sealed tank, with its lees for 5 months, in order to get richer in terms of body and aromatic complexity. The sparkling wine Zitsa showcases classic varietal characteristics managing to maintain an authenticity in flavor and a fruity aftertaste.

Tasting notes: Brilliant yellow colour. This crispy, elegant Debina displays stony aromas and flavors of lime green apple, cinnamon and is characterized by freshness and vivacity.
